  Banana Fritters

These fritters can be served as a snack in between meals or as a delicious low fat, high-fibre dessert.

It may surprise you, but here are great-tasting banana fritters that are also low-fat, low-sodium and provide plenty of fibre. Perfect after sport.

Serves: 4

Preparation time: 10 minutes
Cooking time: 10 minutes

4 bananas, peeled and sliced diagonally
1 cup plain flour
1 tablespoon sugar
1 teaspoon nutmeg
1/2 cup water
2 tablespoons lemon juice
Grated rind from 1 lemon
1 egg, separated
Icing sugar

1. Sift flour, sugar and nutmeg into a bowl. Make a well in the centre and add combined water, lemon juice, rind and egg yolk. Mix well until smooth.
2. Beat egg white until soft peaks form and fold into batter. Drop banana pieces into batter.
3. Allow excess batter to drop from banana. Drop banana onto hot plate or non-stick fry pan, cook until golden brown. Drain on kitchen paper.
4. To serve, dust with icing sugar and serve with low fat vanilla yoghurt.
