  Banana Brownies

For an occasional sweet, tasty treat, enjoy these low saturated fat brownies.

A great tasting homemade biscuit for all the family, designed to keep the saturated fat low.

Serves: 48

Preparation time: 10 minutes

Cooking time: 35 minutes

6 bananas
¾ cup polyunsaturated margarine
8 approx. plain sweet biscuits
4 eggs
2 cups sugar
2 teaspoons vanilla extract
1 1/3 cups self raising flour
¾ cup cocoa

Preheat oven to 180° C.
Melt ¼ cup butter and put into 13 x 9 inch baking pan, tip to coat. Cover bottom of pan with a single layer of biscuits (cut with a serrated knife if necessary.)

Mash enough banana to make 1 cup, set aside. Thinly slice remaining bananas and arrange on the biscuit base. Mix together mashed banana, ½ cup melted butter, eggs, sugar and vanilla. Gently stir through flour and cocoa, till blended. Pour carefully into prepared pan.

Bake 35 minutes or until set in centre. Cool, cut into squares or bars.
