  Thai Banana & Green Chilli Salad

High in fibre and low in saturated fat, this salad is a fresh alternative to your traditional fruit salad.

This salad is a wonderful fibre boost and gives you all your vitamin C for the day. Naturally it is low in saturated fat too.

Serves: 4
Preparation time: 10 minutes

Salad Ingredients:
3 bananas, sliced
200 g mixed salad greens
1 cucumber, sliced
1 cup snow pea sprouts
1/4 cup mint leaves
1/4 cup coriander leaves
1/4 cup roasted peanuts (unsalted)
2 green chillis

To make dressing: Whisk together 2 green chillis, finely diced, 1 teaspoon grated ginger, 1 tablespoon fish sauce, 2 tablespoons lime juice, 1 tablespoon brown sugar, 1/4 cup reduced fat milk and 1 teaspoon coconut essence.

Combine salad ingredients together in a bowl and pour over dressing. Sprinkle with peanuts and serve immediately.
