  Grilled Chicken with Chilli Banana Salsa

The banana salsa adds a fruity flavour to the barbequed chicken skewers.

This protein dish provides potassium, close to your daily needs of niacin, and half your vitamin C requirements, while being low in saturated fat.

Preparation time: 30 minutes
Cooking time: 10 minutes

4 chicken breast fillets, sliced
2 teaspoons sesame oil
3 tablespoons low salt soy sauce
1 tablespoon brown sugar

Chilli Banana Salsa

3 bananas, chopped,
2 red chillis, chopped,
2 tablespoons lime juice,
1 tablespoon chopped mint,
2 tablespoons coriander leaves,
2 tablespoons brown sugar

Place chicken, sesame oil, soy and sugar in bowl and allow to marinate in the refrigerator for 30 minutes.

Thread chicken onto wet or oiled bamboo skewers and set aside. To make salsa: place banana, chilli, lime juice, mint, coriander and sugar in a bowl and toss lightly to combine. Grill, barbecue or pan fry chicken until tender, brushing frequently with marinade. Serve chicken with banana salsa.
